When owner Steven Han’s Momiji (Japanese for “maple tree”) restaurant opens Wednesday night, customers will see a year’s worth of effort by a team of true artisans. The building at 1522 12th Ave. in Seattle’s Capitol Hill neighborhood no longer has “Dawson Plumbing Co.” across its front.

Specifically, we couldn’t find a single place which advertises gluten free sushi, and we were about ready to give up until we went to momiji and learned that they are very knowledgable and a number of their rolls can easily be modified to accommodate a gluten allergy (No crunch, no eel sauce, no crab).
